Tis the season for fresh veggies from the garden. Sometimes figuring out how to make old recipes into healthier, low carb, versions is the trick to having good variety to your diet and staying healthy.
We have had an abundance of rain in the southeast this summer and if anyone else has a garden like mine, you also have an abundance of giant very green tomatoes. As many of them are likely to go bad before ripening, we decided to use the biggest, greenest for fried green tomatoes.
Typical fried green tomato recipes are delicious but typical recipes are lacking when it comes to health. The simplest solution is to replace your flour with almond flour and then fry at a low temperature in olive oil. Below is an example:
2 large green tomatoes
1/2 cup of almonds or almond flour
1 teaspoon of Cajun seasoning
5 tablespoons of olive oil
Slices ends off tomatoes and tomatoes and discard. Slice tomatoes into 1/2 inch slices. Place oil in pan on medium heat. Place almonds and spices into food processor and process into a meal or powder. Scramble the two eggs (do not cook). Place almond meal into a plate. Dip slices of tomatoes into egg and then into almond meal, thoroughly coating each side. Places tomatoes into pan and cook for approximately 5 minutes on each side or until tomatoes are golden brown. Serve hot and enjoy!
